Watermelon Salad with Creamy Mint Dressing

makes 4 servings

Toss luscious watermelon with cool mint dressing for the perfect summer salad.


Creamy Mint Dressing

  • 1/4 avocado, cored and peeled
  • 1/2 lime, juiced
  • 1/4 cup water
  • 4 teaspoons red wine vinegar
  • 1 tablespoons chopped fresh mint
  • sea salt and pepper, to taste

Watermelon Salad

  • 8 cups chopped romaine lettuce
  • 4 cups chopped watermelon
  • 1/4 cup crumbled goat cheese
  • 1/4 cup pine nuts

For the dressing, blend all ingredients together until smooth.  Toss dressing with lettuce until coated, then mix in remaining ingredients.

Recipe Note: This recipe can easily be made vegan by omitting the goat cheese.
